Fat Tuesday is coming up so break out your beads and noisemakers and party on in support of the Big Easy.  This devastated city is on the mend and still cranking out the good times and some of the best grub in the entire country!

Rachael's pop is from Louisiana so she sure knows her stuff when it comes to cajun cooking.  Check out these recipes and get down.

Cajun Crudité

For an appetizer or served with burgers, try this crudite!

One Great Gumbo with Chicken and Andouille Sausage

which goes really well with Shrimp Cocktail with Rach's Quick Remoulade

Delicious Gumbo in 30 minutes.  You can't beat the flavors of this dish.

Andouille Dawgs with Gumbo Sauce

You don't eat this Gumbo out of a bowl with a spoon, it's poured over the dogs!

Creole Style Chili

Here's where Rach's southern roots collide with her Italian side.  And we love the result!

Tilapia with Tomatillos and Avocado filled with Maque Choux

Maque Choux, pronounced "Mock Shoe", is a traditional corn side dish from the south.

Dandelion Green Gumbo with Good Thyme Rice

This gumbo goes well with Rach's Meatless Muffaletta Pannini

And as a great side dish to Spicy Shrimp Burgers,  try Cajun Oven Fries! 

For a hearty winter soup that thinks it's a stew, try Red Beans and Rice Stoup, which is a meal full of good luck! 

Beer Braised Shrimp with Louisiana Salsa and Rice goes great with Bacon Fried Green Beans.

Jambalaya Supper Stuffing (pictured above) is a delicious one dish meal.  But if you want to go vegetarian, try Tofu Jambalaya instead.

For BIG flavor that's Yum-o! Family Friendly (that means it's on the healthy side), try Creole Meatloaves with Trinity Gravy, which goes exceptionally well with Mashed Sweet Potatoes.

Creamy "Grits" with Creole Shrimp couldn't be easier (it's really polenta not grits, but same thing!) and is delicious when served with Smoked Turkey Braised Greens.

Rach's Ragin' Cajun Chili will knock your socks off as will her Salt, Vinegar and Cayenne Fries.

You can wash all of these recipes down with a Root Beer Bomb -grown ups only!
