No-Bake Raisin and Chocolate Chip Granola Balls


It seems like as soon as my 2.5 year old son finishes his breakfast, he’s asking for a snack. I’m not starving the kid, I assure you. Every morning, I make sure he eats a breakfast that’s balanced including plenty of protein and fiber to keep him satisfied. Still, sometimes it doesn’t last in his tummy for very long. From what I’ve read, this type of hunger is normal with toddlers. Some days they eat nothing and other days you can’t feed them enough. I hear I’m in for it when my boys become teenagers. I better go and buy a bigger fridge by the time they become teenagers. LOL.

Since I never know when a snack attack will hit, I like to prepare a bunch of healthy homemade snacks ahead of time so they are ready at a moments notice. I’m a busy mom of two and like most moms, time is hard to come by. Snacks need to be nutritious, quick and easy to prepare. I keep some healthy pre-packaged snacks on hand for those days when I’m in a super rush. But when I have the time, I like to make homemade snacks as often as possible, especially when they are as easy as these granola balls. Granola balls are a favorite around our house. They literally take under 10 minutes to prepare and can be made from the stuff you probably already have in your pantry (perfect for when you remember last minute that it’s your turn for school snack duty-oops!). The process is simple which means you can get the kids involved (bonus! snack+activity in one!). Adults do the melting part and the kiddos can do the measuring and rolling parts. Play around with different nut butters (soy, almond, sunflower etc..) and different dried fruits (cranberries, currants, chopped apricots). You can even toss in some chopped nuts or crushed pretzels to add another layer of texture and crunch.

Raisin and Chocolate Chip Granola Balls

Ingredients:

  • 1/3 cup smooth peanut butter
  • 1/3 cup honey
  • 1 cup rice cereal
  • 1 cup rolled oats
  • 1/3 cup raisins
  • 1/3 cup chocolate chips
Preparation:
  1. In a large bowl combine rice cereal, rolled oats and raisins. Set aside.
  2. Melt peanut butter and honey in a small saucepan over medium heat until smooth and combined.
  3. Pour peanut butter mixture over rice cereal mixture and stir until all of the cereal and oats are coated. Allow mixture to cool for 5 minutes then gently stir in chocolate chips. Roll mixture into i-inch balls. Serve.

    I think I may have done something wrong within the recipe, I thought I followed everything, but when I went to roll the granola, it wouldn’t roll…it would just seperate. I made them with my toddler, and waited a few minutes to try and roll after the chocolate chips were added as I needed to tend to him. I really want to get this right because I know they’d be so yummy…any suggestions??
