This recipe yields quite a few waffles, which is perfect because I like to take the leftovers and wrap them in wax paper and aluminum foil and store them in a freezer bag inside the freezer. This way, when my family wants homemade waffles, they can have them in a flash with no muss, no fuss. To reheat, all you have to do is pop them into the toaster (for crispy waffles) or if you prefer them on the softer side, microwave them for 15-20 seconds. You’ll never use a mix again after you try this easy and addicting recipe. Enjoy!tags: breakfast rice, grains and breads griddle more
It’s important to have a good balance of carbs and protein in the morning to help sustain you until your next meal. With that in mind, I try to add things to the oatmeal that will help keep me satisfied. Today I decided to stir a little almond butter into my cooked rolled oats and top it with some whole almonds, a few chocolate chips and a sprinkling of cocoa powder. The flavor combination is delicious and very filling. The addition of the chocolate chips is definitely a "once-in-a-while" treat but it’s the perfect way to stave off any sweet craving I’m having at the moment without going overboard. A teaspoon of semi-sweet chocolate chips is just the right amount of sweet to satisfy and make my breakfast feel decadent without any guilt at all.tags: breakfast rice, grains and breads simmer more
Recently I tossed together this easy Lemon Caper Sauce. I must admit, it has been ROCKING MY WORLD!!!! The flavor is bright and refreshing and it’s just so perfect for warmer weather grilling. It goes beautifully over grilled chicken and fish and gives you just enough pizazz to make your meal feel special without any guilt. Give this recipe a try and add flavor without excess fat and enjoy every moment of heathy eating success. I know I will!tags: sauces and gravies sauté more
You want to make sure that the soda bread you use isn’t the crumbly kind, or else it won’t slice up nicely. As long as it can be cut evenly into slices using a serrated knife, you are good to go. And if you have the sweeter style, raisin studded bread, even better. Enjoy!tags: breakfast brunch rice, grains and breads fry more
I love the combination of feta and spinach because the saltiness of the cheese really pairs well with the mild earthiness of the spinach and the lemon zest just wakes it all up so beautifully with its bright and refreshing flavor. Baking the quiche filling inside a ciabatta loaf not only looks gorgeous, it means you don’t need utensils to eat it – this is a perfect playdate snack, because mommies can munch with one hand and hold their toddlers in the other. Genius, if I do say so myself!tags: snacks brunch rice, grains and breads eggs vegetables bake more
My son is four, which means he’s super into desserts and even more so if they are presented on a stick (who isn’t, right?). He’s also a huge fan of marshmallows, so I decided to teach him how to make Rice Krispie treats. They are easy enough to make and I knew he’d never had them before so he’d be excited to try a new recipe. I wanted our recipe to be a something that felt crafty, too, so I decided to make these Rice Krispie treats festive by cutting them into heart shapes, dipping them in melted pink chocolate and sprinkling them with hearts. We even decided to use red and white colored straws as our lollipop sticks and I think they came out so cute.
Wrap each pop in a small cellophane bag and tie with a ribbon and you have yourself one adorable, edible Valentine. They also make excellent bake sale items and will definitely sell like fast – so be sure to make a double batch.tags: desserts boil more
It’s no secret that I love oatmeal. I literally eat it all year round. I do, however, like to mix it up a bit as the weather warms up and make a chilled version of my favorite breakfast food. The best part is, it’s not only super quick to toss together, it can be made in advance and stored in an airtight container in the fridge for up to 3 days. This recipe is wide open to interpretation. In fact, I encourage you to play around with your favorite dried fruits and nuts and even spices. The possibilities are endless and only limited by your imagination, so go wild!!tags: breakfast snacks fruit rice, grains and breads no-cook more
Blogger Christina shares this delicious summer dessert recipe with us!
"I fell in love with Pavlovas a few years ago after tasting one fresh out of the test kitchen at Every Day with Rachael Ray magazine. Normally I’m not a fruit dessert kinda gal. Chocolate is and always will be my 'thing' but the Pavlova is special. Pavlova is a meringue-based dessert with a crisp crust and soft, light inside. It’s often served topped with a layer of fresh whipped cream and macerated fresh berries. It’s light and refreshing and honestly the perfect ending to any summer meal."tags: desserts fruit bake more
