What I particularly enjoy about this recipe is the amount of salt in it. While it does have some brown sugar to help bring out the sweetness in the pumpkin and corn, it’s most definitely a muffin erring more on the side of "savory" than "sweet." Perfect, in my opinion, to enjoy over a cup of coffee in the morning or pass around the dinner table at night.

It’s important to have a good balance of carbs and protein in the morning to help sustain you until your next meal. With that in mind, I try to add things to the oatmeal that will help keep me satisfied. Today I decided to stir a little almond butter into my cooked rolled oats and top it with some whole almonds, a few chocolate chips and a sprinkling of cocoa powder. This recipe yields quite a few waffles, which is perfect because I like to take the leftovers and wrap them in wax paper and aluminum foil and store them in a freezer bag inside the freezer. This way, when my family wants homemade waffles, they can have them in a flash with no muss, no fuss. To reheat, all you have to do is pop them into the toaster (for crispy waffles) or if you prefer them on the softer side, microwave them for 15-20 seconds.
