I was inspired to make this dessert by my sister-in law Joy, an excellent cook, who made it for us a few weekends ago. When I walked into her house, the kitchen smelled like apple pie, but Joy was making baked apples. She served them up with plenty of the delicious pan juice, and I couldn’t get over how satisfying and creamy they tasted. I topped mine with a dollop of almond butter, and the combination of flavors tasted remarkably like apple pie.tags: desserts fruit bake more
My newly teenaged daughter loves chocolate, but she also loves my lemon squares, but I don't make them very often, as they are not a majority favorite in my house. The other day I made these lime bars as a riff on the lemon squares and we both liked them even more.tags: desserts lunch box cookies fruit bake more
Avocado replaces half of the butter in these festive cookies that have a citrus "spark". Rolling the cookies in colored sanding sugar gives these soft cookies a nice crunch. Using a tip from our registered dietitian, we replaced half the fat in these cookies with equal amounts of fresh avocado to increase the fruit intake. By substituting avocado, the nutritional value of the baked good is enhanced with the fruit's contribution of nearly 20 vitamins, minerals and phytonutrients, along with "good fats" (poly and monounsaturated fats). Additionally, the overall calories in a recipe can be reduced by substituting avocado for an ingredient like butter. Two tablespoons of avocado has 50 calories, whereas two tablespoons of butter total 204 calories.

This is the perfect Monday dessert: made in one bowl and baked in a loaf pan. You can choose to top with powdered sugar. Or whipped cream. Or ice cream. Or berries. Or all of the above. I think it would be completely acceptable to toast it with some peanut butter for a snack – or let's be honest, breakfast. Inspired by the cardamom-infused tea and coffee that is popular in Iran and Turkey, this cardamom cake is garnished with a rich coffee cream. Mashed potatoes are baked into the cake to give it a dense and creamy texture. The recipe calls for a combination of fava bean and tapioca flours, in order to make it gluten free, but you can replace those with regular white flour, if desired. The cake is done when the center springs back against your fingers; any longer and the edges will be dry.

I recently was in Toronto with a few friends and we stopped into a Starbucks, where I was introduced to these oat fudge bars. I had to make my own and they are pretty close to the real thing – actually, I think they're a tiny bit better (sorry, Starbucks)!tags: desserts lunch box cookies rice, grains and breads bake more
