Make-Ahead Chilled Oatmeal

Make-Ahead Chilled Oatmeal

It’s no secret that I love oatmeal. I literally eat it all year round. I do, however, like to mix it up a bit as the weather warms up and make a chilled version of my favorite breakfast food. The best part is, it’s not only super quick to toss together, it can be made in advance and stored in an airtight container in the fridge for up to 3 days. This recipe is wide open to interpretation. In fact, I encourage you to play around with your favorite dried fruits and nuts and even spices. The possibilities are endless and only limited by your imagination, so go wild!!

Mixed Fruit Pavlova

Mixed Fruit Pavlova

Blogger Christina shares this delicious summer dessert recipe with us!

"I fell in love with Pavlovas a few years ago after tasting one fresh out of the test kitchen at Every Day with Rachael Ray magazine. Normally I’m not a fruit dessert kinda gal. Chocolate is and always will be my 'thing' but the Pavlova is special. Pavlova is a meringue-based dessert with a crisp crust and soft, light inside. It’s often served topped with a layer of fresh whipped cream and macerated fresh berries. It’s light and refreshing and honestly the perfect ending to any summer meal."

Baked Apples

Baked Apples

I was inspired to make this dessert by my sister-in law Joy, an excellent cook, who made it for us a few weekends ago. When I walked into her house, the kitchen smelled like apple pie, but Joy was making baked apples. She served them up with plenty of the delicious pan juice, and I couldn’t get over how satisfying and creamy they tasted. I topped mine with a dollop of almond butter, and the combination of flavors tasted remarkably like apple pie.

Lime Bars

Lime Bars

My newly teenaged daughter loves chocolate, but she also loves my lemon squares, but I don't make them very often, as they are not a majority favorite in my house. The other day I made these lime bars as a riff on the lemon squares and we both liked them even more.

Cherry Tomato Bombs

Cherry Tomato Bombs

Here’s a “firecracker” you can eat! Pop these creamy Cherry Tomato Bomb appetizers into your mouth in a single bite and enjoy the fireworks. Avocados are a good way to get more lutein in the diet and act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha- and beta-carotene as well as lutein, in foods that are eaten with the fruit. This recipe provides 136 IU of lutein, a natural antioxidant concentrated in the macula of the eye, which research suggests may help maintain healthy eyesight as we age.

Serving Suggestion: If you have extra cream cheese and avocado, mix them together and add some Sriracha. Enjoy on pepper strips or crackers.
