I am always on the lookout for a new muffin recipe - I came across this newest one that looked somewhat healthy but delicious and decided to give it a try. They are chock-full of fruit - strawberries, blueberries, and banana - but I am sure they would work well swapping in any fruit you want. You could switch raspberries for the strawberries, fold in chopped apple for the blueberries - there are tons of possibilities depending on what you have on hand. As with all recipes that call for nuts, feel free to leave them out. From a recipe by Sunny Anderson, foodnetwork.com.tags: breakfast snacks lunch box fruit bake more
This refreshing summer soup takes inspiration from the flavors of a classic Greek salad, with the added cool creaminess of ripe avocado. In the summer, pick up some ripe heirloom tomatoes from your local farmer's market to really kick up the freshness.tags: soups and stoups appetizers lunch box lunch vegetables no-cook food processor or blender more
Ireland is not necessarily known for the food, but one standout worth making for St. Patrick's Day (or anytime) is this delicious – and easy – Irish Soda Bread. No yeast, and therefore rising, is required; I whipped the dough up in about 5 minutes, then it bakes in the oven for 45 minutes. This bread has a delicious, soft texture with a crusty exterior, and is lightly sweetened with orange zest and currants. Cheesecake it a perfect example of "a little goes a long way," which is why these cheesecake squares are the perfect size: one square is a one- or two-biter. Not overly sweet, there is a generous amount of lemon in this recipe, so if you're not crazy about citrus, cut the amount of lemon zest and juice in half.
Cheesecake can be tough to slice. Dip a sharp (non-serrated) knife into warm water before slicing for neater cuts. The thin slice of strawberry on the top hides any imperfections!tags: desserts lunch box cookies cheese bake food processor or blender more
On my quest for the perfect brownie recipe, I have discovered a new favorite in the past month. Peanut butter caramel swirled brownie - it is a delicious combo of creamy and slightly salty peanut butter, rich caramel and fudgy brownie. I have made these four times in the past two weeks - a good sign. These are best served cold from the fridge and small - if you can! It's hard to believe that I (lover of all things chocolate) have never made chocolate chip muffins, but it's true. My kids recently discovered them at Tim Horton's with friends, which inspired me to make some hopefully healthier and more reasonably sized versions at home. They make a great after-school snack or even dessert – the sprinkle of cinnamon sugar on their tops make them a little bit special. Like most muffins, they freeze well. Adapted from Joyofbaking.com.
