Frosted Sugar Cookies

This recipe was sent from rachaelray.com visitor, Sandi White. Sandi tells us that this is "A soft and yummy sugar cookie. This recipe came to me from my mom. I bake about 75 - 80 dozen of these (with frosting) for 4 holidays every year - Valentine's Day, St. Patrick's Day, Halloween and Christmas. My husband serves these at the 5 branches of the bank of which he is president and CEO, here in rural Iowa."

Ingredients

Cookies

  • 1 cup butter
  • 1 cup sugar
  • 1 1/2 teaspoons vanilla
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 3 1/2 cups flour

 Frosting

  • 6 tablespoons butter
  • 1 1/2 teaspoons vanilla
  • 1/4 cup milk
  • 4 cups powdered sugar (approx.)
     
Serves 21

Preparation

Cookies

Pre-heat oven to 350°F.

Cream butter, sugar and vanilla. 

Add eggs one at a time, beating after each addition.

Add baking soda and cream of tartar.  Stir in flour. 

Refrigerate overnight. 

Roll out, cut with cutters and bake for 6-7 minutes.

Do not overbake so cookies will stay soft.
 
Frosting

Cream butter and about 1 cup sugar.

Add vanilla and mix.

Add milk and rest of sugar alternately, until frosting is of a good spreading consistency.
