No-Time-for-Breakfast Biscuits

Make these quick biscuits that everyone will enjoy!

Ingredients

  • 1 tablespoon extra virgin olive oil (EVOO)
  • 4 strips bacon, chopped
  • 5 eggs, divided
  • Salt and freshly ground black pepper
  • 2 1/4 cups baking mix, such as Bisquick brand
  • 1 cup milk
  • 1 cup shredded yellow cheddar cheese
Serves 4

Preparation

Pre-heat the oven to 425ºF.

Place a medium size skillet over medium-high heat with one turn of the pan of EVOO, about 1 tablespoon. Add the bacon to the pan and cook until golden brown and crispy. Remove the bacon from the pan and drain on a paper towel-lined plate.

Beat four eggs in a small mixing bowl. Add the eggs to the pan that the bacon was cooked in, then season with salt and pepper and scramble them lightly. Transfer the eggs to a plate and reserve.

In a medium size mixing bowl, combine the baking mix, milk and the remaining egg to make the batter. Gently stir in the crispy bacon, scrambled eggs and shredded cheese.

Deposit dollops of the batter onto a greased baking sheet and bake until golden brown, 10-12 minutes.
