- 1 head celery root
- 2 carrots
- 2 tablespoons good quality EVOO
- Juice of 1/2 of a lemon
- Salt and pepper
Peel off the dirty, grassy, outer layer of the celery root and cut into four large pieces to make it easier to shred. Peel the carrots. Shred both, either together in the food processor or with a box cutter using the large shredder side.
Whisk the EVOO and lemon juice together in a bowl and toss with the veggies. Season with salt and pepper, to taste.
